How to cook ribeye steak

Learn how to cook ribeye steak, its is incredibly simple to make the most perfect, juicy ribeye steak. It just takes  a little planning.

Ingredients

Scale
  • 1 Ribeye Steak
  • Knob of butter
  • Salt
  • Pepper
  • Few Sprigs of Rosemary
  • 2 Crushed Garlic Cloves

Instructions

  • Remove ribeye steak from fridge at least 30 minutes before cooking
  • Season steak on both sides with salt and pepper
  • Heat dry pan until hot 
  • Put in the steak and cook for 4 minutes
  • Flip steak and add the butter, garlic and rosemary 
  • Continue to baste the steak with the butter for 3 minutes
  • Check doneness with finger test
  • When done to your liking remove from pan and allow to rest for at least 10 minutes
  • Serve with your favourite sauce and sides
  • Enjoy!

How to cook ribeye steak

The Ribeye is one of the most popular steaks, along with the fillet. Unlike other steaks, it features marbled fat through the meat, as well as a section of fat in the middle which is known as the “eye”.

It is this fat that gives the ribeye the tender and juicy flavour, as it melts into the steak when cooking. 

Now when it comes to Ribeye Steak, you need to think about where on the joint you get your steak from.

One end is known as the short loin and this has very little of the fat and is therefore not as flavoursome. The other end is known as the chuck and this has the most marbling.

The middle is often your supermarket ribeye, it does have some marbling.

When buying your ribeye steak, if you want it to have as much flavour as possible you need to get it from the chuck end. 

There are 4 things you need to look for when choosing your ribeye.

  • Deep Red in Colour
  • Plenty of Marbling
  • At least 2.5cm thick 
  • Meat has been aged

Checking for the above things will make sure you get the best quality meat, which will also have the most flavour. 

Remember no matter how good you are at cooking ribeye, it needs to be a good quality cut of meat for it to really taste good.

5 Tips for cooking perfect Ribeye Steak

  • Take the ribeye steak out of the fridge 30 minutes before cooking, this will help it get to room temperature for an even cook.
  • Don’t use oil in your pan, allow the juices from the fat and butter to soak back into the meat
  • Make sure your griddle pan or cast iron skillet is hot before putting on the steak
  • Allow it to rest for 5-10 minutes after cooking, this will help the ribeye meat relax and make it much more tender
  • When resting do NOT cover with foil, as this will trap the heat and continue to cook it

How To Cook Ribeye Steak – Detailed Step By Step Guide

Here you will find a detailed step by step instructions on how to cook ribeye steak.

So what will you need to cook the perfect ribeye steak?

Before you get started, you need to make sure you have; 

  • The ribeye steak 
  • Knob of butter
  • Few sprigs of rosemary 
  • 2 cloves of garlic
  • salt  & pepper
  • Cast iron skillet or griddle pan

Remember to take your ribeye steak out of the fridge for at least 30 minutes before cooking, this is essential as you want to cook it at room temperature.

Next you want to season the steak with salt and pepper, you want to generously add salt.

In fact it should be more than you think it should be.

As a guide I would use 1 teaspoon for every 450g of steak, make sure you do season both sides. 

Heat up your pan, I use a griddle pan as I like the grill marks it creates on the steak.

You want to heat this up until it is very hot, you should never cook ribeye steak on a cold pan.

Once the pan is hot, place your steak onto it and you should hear it sizzle. Now you just want to leave it alone for around 4 minutes, so many people move it or mess around with it but this can impact the caramelization.

After 4 minutes you want to flip the steak and then add the butter, crushed garlic and rosemary sprigs. 

Whilst this side is cooking you want to baste the steak with the butter, simply tilt the pan and with a spoon get the butter and pour it over the steak.

Continue cooking this side for another 3 minutes or until you are happy with how cooked it is. 

You do not need to use a meat thermometer, the meat is generally too thin to really test it accurately.

Not only that but when you poke holes into it, all those tasty juices are going to escape.

Instead you want to do the steak doneness finger test, this will give you a rough idea on whether it is done to your liking. 

When the ribeye steak is finished, remove from the pan and allow to rest. A good amount of time to leave it to rest for is 10 minutes.

To be more exact you want to rest it for 10 minutes per every 450g or 5 minutes for each inch of thickness.

Whilst the Ribeye steak is resting, DO NOT;

  • Slice it – this will prevent it from relaxing and impact how tender it is
  • Cover with foil – many people make this mistake and it ends up continuing cooking the steak, as foil will trap the heat in. 

After the meat has rested, server with your favourite steak sauce, sides and enjoy the juiciness!

What to serve with Ribeye Steak

There are so many nice things that go with Ribeye steak, personally I don’t think you can go wrong with homemade chips, peas, asparagus and a nice corn on the cob.

You then want to finish this off with a nice beefy mushroom sauce.

Replacing the peas with some braised seasonal greens and the chips with some nice fondant potatoes will take it up a level.

You could then make a nice red wine jus to go with it. 

In the summer months, why not cook the ribeye steak on the BBQ and make a really tasty salsa verde, accompany this with a nice fresh summer salad.

As you can see the options for sides are endless, the key is to keep the ribeye the star of the show.
